【走入廣州人的日常！西塱市場超平買菜，芳村33年神級大排檔吃啫啫煲🍲】
大家好！今天帶大家過一個非常地道的廣州週末日常！
下午我們先去了一趟人氣滿滿的 西塱市場 買菜。今年的水果真的很便宜，帶大家看看廣州傳統街市的物價，順便買了荔枝、龍眼、四川脆李跟夏橙，真正實現「水果自由」🍎🍉！
買完菜後，我們直奔芳村坑口，來到了一家開了33年的老字號大排檔——「大家福」！這家店即使之前經歷過小火災，依然擋不住街坊們的熱情，越做越旺🔥。他們家的招牌「啫啫雞煲」只要45蚊，雞肉滑嫩緊實，外帶微焦的脆邊，加上蝦醬與雞油在砂鍋裡滋滋作響，那股獨特的「鍋氣」真的是絕了！另外還點了鐵板蠔仔蛋跟焦香的豬腸粉，滿滿的都是老廣東的味道🤤。

廣州啫啫煲是粵菜獨有的砂鍋烹調法，名稱源於食材在高溫瓦煲中發出的「嗞嗞」聲（粵語音「啫」）。起源於上世紀八十年代廣州大排檔，因《舌尖上的中國2》而聲名大噪。做法是將生鮮食材直接放入燒至攝氏二三百度的砂煲，猛火快炒，不加一滴水，利用食材自身水分，出鍋前淋黃酒增香，口感脆嫩。分為生啫（全程生料入煲）與熟啫（先預熟），以及清啫（輕調味）與醬啫（濃醬）。特點是快、乾、香、暖，上菜時須奔跑送達以保最佳火候。傳統食材有黃鱔、雞、豬腸等，現今鮑魚、龍蝦、蔬菜皆可入煲。知名食肆以惠食佳最為著名，獲米其林推薦，另有榮生、天寶等老字號。

Guangzhou’s juejuebao is a signature Cantonese clay-pot cooking method, named after the sizzling “juejue” sound (Cantonese onomatopoeia) produced when ingredients hit the superheated pot. Originating in the 1980s street stalls, it gained fame through “A Bite of China 2”. Fresh ingredients are stir-fried in a pot heated to 200–300°C without added water, relying on their own moisture, with a dash of yellow wine at the end for aroma. Techniques include raw jue (uncooked ingredients fully cooked in pot) and cooked jue (pre-cooked), plus clear jue and sauce jue. The dish is fast, dry, aromatic, and piping hot, rushed to the table for perfect doneness. Classic ingredients include eel, chicken, and intestines, but now abalone, lobster, and vegetables are also used. Top restaurants include Wui Sik Ga (Michelin-recommended) and local favorites like Rongsheng and Tianbao.————————
廣州坑口村位於荔灣芳村，南宋末年建村，因南北兩溪匯流得名。村中最著名的是「坑口生菜會」，傳承三百餘年，每年農曆正月廿六舉行，以生菜諧音「生財」祈求財運，2007年列為市級非遺。該村現正進行大規模城中村改造，佔地約148公頃，總投資316億元，首期安置房已動工，將依托白鵝潭商務區打造現代化城區。

Its most renowned tradition is the Kengkou Lettuce Festival, over 300 years old, held on the 26th day of the first lunar month, using lettuce as a homophone for wealth, and listed as a municipal intangible cultural heritage in 2007. The village is now undergoing major urban renewal, covering about 148 hectares with a total investment of 31.6 billion yuan; the first-phase resettlement housing has started construction, aiming to become a modern district within the Baie’tan Business Area.

龍眼（學名 *Dimocarpus longan*）為亞熱帶常綠果樹，原產中國南方，因剖面似龍眼而得名，亦稱桂圓。主產廣西、廣東、福建、海南及泰國等地。果肉晶瑩，富含維生素C、鉀、鐵及胺基酸。中醫認為性甘溫，補心脾、養血安神。可鮮食或製乾，常用於甜湯藥膳。選購宜選外殼粗糙、顏色黯淡、果身結實者。
