Jimmy Ly’s Madame Vô has been named a 2026 Savor Honoree for Excellence in Pho in Manhattan.
Madame Vô opened ten years ago, becoming one of the most popular pho restaurants in NYC, and Sarah Jessica Parker is among the people who call it their favorite, along with a few million more who agree.
What inspired the short rib inside Madame Vô’s well-known pho? He first saw it on a tray at his future mother-in-law’s house, at a family dinner, back when he and Yen were still dating.
“It was like dinosaur ribs. Huge. It blew my mind.”
He put it on the menu because that is how they ate it at home, so that everyone who walks through the door gets to have the same moment he did.
